Energy balls with pineapple

 

What you need:

100 g pitted dates

50 g dried pineapple

50 g cashew nuts, or nuts of your choice (soak the nuts in water for a few hours for better

30 g shredded coconut + a little more for topping

How to make it: Soak the dates and pineapple in a little water for approx. 5 minutes.

Place all the ingredients in a blender or food processor, adding a little more coconut milk or water if necessary.

Add some coconut milk or water if necessary and blend until a sticky mixture is formed.

Form small balls (about the size of a walnut). Roll the balls in the grated coconut,

until they are covered all over. Place in the fridge for at least an hour,

so that they become firm. Perfect for a little energy boost between meals!
